Prepare the Flounder and coat with mustard
Rinse the flounder fillets under cold water and pat them dry with paper towels.You can add mustard to the wet base , but I like coating the flounder with mustard.Mustard adds a unique tangy and slightly spicy flavor to the flounder. This can enhance the overall taste of the dish, providing a pleasant contrast to the mildness of the fish.Mustard acts as a natural adhesive, helping the breading or coating stick to the fish. This ensures that the breading adheres firmly to the fish and doesn't easily fall off during frying.Mustard can help retain moisture in the fish during the frying process. The moisture in the fish combines with the mustard, creating steam that cooks the fish from the inside as it fries on the outside. This can result in a more succulent and less dry final product.

The mustard should be enough but I like to take extra step to make this fry flounder more flavorful. The wet batter acts as a sticky medium that helps the dry breading adhere to the flounder. Without the wet batter, it can be challenging to get the breading to stick evenly to the fish.The wet batter helps lock in moisture within the fish. As the flounder cooks in the hot oil, the moisture inside turns into steam, creating a barrier that helps prevent the fish from becoming dry. The wet batter can be seasoned and flavored, adding extra taste to the dish. Add 2 eggs in a bowl , beat and add half of lemon juice , Hot sauce and sprinkle the seasoning mix ( The OldBay, Slap Ya Mama , Onion and Garlic Powder ) about 2 or 3 tablespoon . Mix to ensure everything is well combined.

You can make your own breading mix or simply use flour . I used a classic fry breading mix and added the remaining of the seasoning mix ( The OldBay, Slap Ya Mama , Onion and Garlic Powder)

Dredge flounder in wet batter
Dip it into the whisked eggs, allowing any excess to drip off

Coat each flounder fillet in the breading mix, shaking off any excess
coat it thoroughly with the breading mix, pressing the breadcrumbs onto the fillet to ensure they adhere well

Let it sit on a rack for 5 mins then fry
I do this to make sure the breading is stick throughout. In a deep skillet or frying pan, heat about 1-2 inches of cooking oil over medium-high heat. To test the oil sprinkle some breading mix in the oil , you'll know it's ready when a breading mix sizzles and starts to brown immediately when you drop it into the oil.Carefully place the breaded flounder fillets into the hot oil using tongs or a slotted spatula.fry for about 4-5 minutes on each side, or until the flounder is golden brown and crispy. The exact cooking time may vary depending on the thickness of your fillets, so keep an eye on them.Once the flounder is cooked to perfection, use a slotted spatula to remove them from the oil and place them on a cooling rack to drain any excess oil.
