Gnomi as we call it in the Ivory Coast , is a street snack beignets made out of millet flour , rice porridge, flour and mashed bananas etc. Across Africa you will find that each countries calls it a different name and the recipes may be tweaked a little . In Tanzania it is call Vitumbua, In Nigeria it is similar to Masa.

Place rice porridge and bananas into a blender and blend to a smooth consistency. You should have a liquidy paste.

Pour the banana mixture into a bowl and add the remaining ingredients.

Cover and let it rest for 30 mins to 1 hour. Once rest, stir and begin to start the cooking process .

Oil your pan. If you are using a regular pan , pour mixture into a bottle dispenser to control the amount and size of the Gnomi.A spoon can be used as well to measure size amount.

Place mixture to pan and let it cook.

Heat up to golden brown and flip to cook the other side.

Just like that you have made homemade Gnomi. Can be serve with milk or eaten as is
